Lunch Box Packing Bites

We are always searching to find new ways to fill the lunch box and balance everything out.  Here are two of our favorite quick and easy finds that have been big hits for lunchtime bites. Peanutty Apple Wraps make a great sandwich alternative to peanut butter and jelly and at snack time we love to make frozen fruit parfaits. The frozen fruit thaws by time snacks are served, the juices release a great flavor to the vanilla yogurt and it helps to keep the yogurt cold when lunchbox temps can sometimes be a concern.

Peanutty Apple Wraps! by Jodie Fitz

 2 tablespoons peanut butter

1 teaspoon honey

½ teaspoon cinnamon

1 medium apple

Whole Grain wrap

Prepare the apple by washing, peeling and coring it.  Either slice the apple into thin slices (my children’s favorite) or place the apple into a mini food processor to chop (my personal favorite).  If you chop the apple in a mini food processor stir the cinnamon into the apple.  If you slice the apple, simply add the cinnamon into the peanut butter spread.  Create the peanut butter spread my stirring together the honey and peanut butter.

Spread the peanut butter mixture onto the wrap, add the apples and fold like a burrito.  This recipe makes for a great lunch alternative to peanut butter and jelly or serves up a quick & healthy breakfast option for mornings on the run.

Peanut allergies:  Replace the peanut butter spread with the following spread; 1 tablespoon of whipped cream cheese, 1 tablespoon  vanilla low fat yogurt, 1 teaspoon honey and 1/8 teaspoon vanilla extract.

6 oz. low fat vanilla yogurt

1/2 cup frozen Berry Medley, frozen

1 tablespoon Grape Nut cereal

Simply place the yogurt in a travel container, top it with frozen berries and grape nut cereal.  Keep the berries frozen when adding them to the yogurt;

1.  They help to keep the yogurt cold.

2.  They thaw by snack and/or lunch time.
